Sweet and Sour Pork Ribs is a popular traditional Chinese dish, known for its unique sweet and sour flavor. Here's how to make this delicious dish:

Ingredients:

  • Pork ribs: 500 g
  • Green pepper: 1
  • Red pepper: 1
  • Ginger: 3 slices
  • Garlic: 3 cloves
  • Cooking wine: 1 tablespoon
  • White vinegar: 2 tablespoons
  • Sugar: 3 tablespoons
  • Soy sauce: 2 tablespoons
  • Ketchup: 3 tablespoons
  • Salt: to taste
  • Water: to taste
  • Oil: to taste

Procedure:

  1. Preparations:

    • Wash the pork ribs well and cut them into pieces of about 3-4 cm.
    • Cut the green and red pepper into pieces.
    • Slice the ginger and crush the garlic.
  2. Marinate the ribs:

    • Place the ribs in a large bowl, add 1 tablespoon of cooking wine, an adequate amount of salt and the ginger slices. Mix well and marinate for 30 minutes.
  3. Blanch the ribs:

    • In a pot, add an adequate amount of water and bring to a boil. Add the ribs and blanch them until they change color, then drain them and let them dry.
  4. Fry the ribs:

    • Heat an adequate amount of oil in a pan to 170-180 degrees Celsius.
    • Fry the ribs in batches until golden brown, then drain and let dry on paper towels.
  5. Prepare the sweet and sour sauce:

    • In a bowl, mix ketchup, sugar, white vinegar, soy sauce and a little water to make the sweet and sour sauce.
  6. Sauté the ribs:

    • In a pan, heat a little oil and fry the ginger and garlic until fragrant.
    • Add the fried ribs and sauté them evenly.
    • Pour the prepared sweet and sour sauce and stir until the ribs are evenly coated with the sauce.
  7. Add the vegetables:

    • Add the green and red pepper pieces and continue to sauté for a few minutes until the vegetables are just cooked through and the ribs have absorbed the flavor.
  8. Thicken the sauce:

    • Cook over medium-low heat until the sauce thickens and evenly coats the ribs and vegetables.
    • Turn off the heat and serve the dish.

Suggestions:

  • When frying ribs, it is important to adjust the oil temperature correctly: too high can burn the ribs on the outside while remaining raw on the inside; too low can make the ribs less crispy.
  • The sweetness and acidity of the sweet and sour sauce can be adjusted to taste by adding more sugar for a sweeter flavor or more vinegar for a more sour flavor.
