Spring rolls are a classic Asian dish, known for their crispiness and savory filling. Whether served as an appetizer or a snack, spring rolls are always a popular treat. Here are the details on how to make them.

Ingredients

For the involtini pastry :

  • 20 spring roll sheets (also called rice paper)

For the filling :

  • 200g minced pork (or minced chicken, shrimp)
  • 1 carrot, cut into julienne strips
  • 100g cabbage, cut into julienne strips
  • 50g of soy sprouts
  • 2 spring onions, chopped
  • 2 cloves garlic, minced
  • 1 piece ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 teaspoon white pepper
  • 2 tablespoons vegetable oil

For closing and frying :

  • 1 egg, beaten (for sealing the rolls)
  • Vegetable oil (for frying the rolls)

Procedure

  1. Prepare the filling :

    • In a large bowl, mix the ground pork with the soy sauce, oyster sauce, sugar, salt and white pepper. Marinate for 10 minutes.
    • Heat oil in a pan, add chopped ginger and garlic and fry until fragrant.
    • Add the marinated meat and cook until it changes color.
    • Add the carrot, cabbage and bean sprouts, continuing to cook until the vegetables are tender.
    • Finally add the spring onions and mix well, then remove from the heat and let the filling cool.
  2. Prepare the rolls :

    • Take a spring roll sheet (rice paper) and place it on a clean surface, so as to form a diamond.
    • Place an appropriate amount of filling near the bottom vertex of the diamond, leaving about 2 cm from the edge.
    • Fold the bottom edge over the filling, then fold the sides towards the center.
    • Continue rolling until it forms a cylinder, sealing the last corner with a little beaten egg.
  3. Fry the rolls :

    • Heat plenty of oil in a pan to 180°C.
    • Fry the rolls in small batches to avoid lowering the oil temperature.
    • Cook until the rolls are golden brown and crispy, about 3-4 minutes.
    • Drain the rolls on absorbent paper to remove excess oil.
  4. Serve :

    • Serve the spring rolls warm, accompanied by a sweet and sour sauce or a soy and vinegar sauce.
