HOW TO COOK RICE (for 4 or 5 people)

Place the rice in a bowl and wash it with cold water. Repeat washing 3 or 4 times until the water remains clear.
Place the rice in a pan. Add approximately 4.0 - 4.5 cups of water per 4 cups of rice, depending on the desired consistency of the rice (less water for sushi rice).
Cover the pan with a lid and bring to the boil over high heat.
Reduce the heat to low and leave to cook for about 15-20 minutes.
Turn off the heat and let the rice rest in the covered pan for 5 minutes. Then mix the rice and let it rest for another 10 minutes before serving.
